Instead of oil, anhydrous powdered glucose is used, melted at around 160 \u00b0C.<\/p>\n<p>Fish cooked in glucose retains a flavour and texture close to raw: the constant temperature does not cause the loss of juices or steam from the flesh. To neutralise any residual sweetness, two leek leaves added to the cooking bath are sufficient.<\/p>\n<\/div>\n<\/div>\n<div style=\"height:40px\" aria-hidden=\"true\" class=\"wp-block-spacer\"><\/div>\n<div class=\"wp-block-group has-white-color has-text-color has-background\" style=\"background-color:#1a1a1a;padding-top:2.5rem;padding-bottom:2.5rem;padding-left:2rem;padding-right:2rem\">\n<div class=\"wp-block-group__inner-container is-layout-constrained wp-block-group-is-layout-constrained\">\n<h3 class=\"wp-block-heading has-text-color\" style=\"color:#faaf40\">How it works<\/h3>\n<p class=\"has-white-color has-text-color\" style=\"line-height:1.8\">At 160 \u00b0C molten glucose has higher viscosity and density than oil. These physical properties create a barrier that traps moisture inside the food and prevents fat from entering during cooking. The result is fat-free cooking with cooking times halved compared to conventional frying.
